With an average of 354 days of sun per year in the greater Palm Springs area and a culture built around enjoying the outdoors, many of our local hotels excel at food and drink to enjoy by the pool. We’ve rounded up some stand out fare to sample around town (swimsuit optional!).
ACE HOTEL & SWIM CLUB
We love the tacos at ACE HOTEL & SWIM CLUB, home to KING’S HIGHWAY restaurant and THE AMIGO ROOM, where Chef Gregorio Calderin and his team make the tortillas by hand daily, with options including Mahi Mahi Fish (grilled or crispy with mango habanero salsa, frisée-radish, caper crema), Mushroom & Chayote (sautéed mushrooms, queso fresco, huitaloche aioli, scallions) and Pollo Verde (chicken, queso fresco, picked red onion, cilantro).
Ace Hotel also boasts a menu full of perfect poolside beverages, like our favorite, the Desert Facial (vodka, pineapple, mint, cucumber). The folks at Ace Hotel were kind enough to share the recipe for the Desert Facial and two other delicious drinks for you to recreate at home!
THE DESERT FACIAL
2 oz Vodka
3 oz Pineapple juice
5 Mint leaves
2 Cucumber slices
Muddle mint and cucumber, then add vodka and pineapple juice. Shake well and transfer into a Collins glass. Garnish with a cucumber slice.
2 oz Blanco tequila
1 oz Lemon juice
.5 oz Simple syrup
1 bottle Ginger beer
3‐4 Sprigs of thyme
Muddle blackberries and thyme, then add tequila, lemon juice and simple syrup. Shake well and strain over fresh ice into a highball glass. Top with a splash of ginger beer and garnish with two blackberries and a sprig of thyme.
1.5 oz Tequila
.75 oz Pineapple Campari
1 oz Lime juice
.25 oz Pineapple juice
.25 oz Agave nectar
Add all ingredients and shake well. Transfer into a rocks glass and garnish with pineapple leaf.

The hotel’s RESERVOIR restaurant overlooks the pool, or snag a poolside table or cabana to enjoy Shrimp Ceviche (wasabi, cucumber, hass avocado, red onion, lemon, lime juice) or Wagyu Beef Sliders (caramelized onion, mizuna, gryere, brioche bun) with an excellent craft cocktail.

Head to THE PURPLE PALM restaurant at the ultra-chic COLONY PALMS HOTEL for their daily Sunset Hour, featuring specials on wine, beer, craft cocktails and delicious bites like their cheese platter, an outstanding customizable selection of cheeses with fruit, nuts, house-made compote and truffled honey.

Dining and drinking options abound at THE SAGUARO PALM SPRINGS, with two great restaurants on site (EL JEFE tequila bar and the new ROCCO’S ELECTRIC) as well as a pool bar where you can order your cocktails in darling fruit-shaped cups, or even have your own poolside cactus-shaped drink dispenser to keep the refreshments flowing for you and your friends.
Be sure to try the Sope Combo at Rocco’s Electric, with one each of Nopales (fried paddle cactus, baby portabellas, black beans, roasted corn, crema, micro-cilantro, radishes), Chicken Tinga (Guajillo-braised pulled chicken, crema, fennel, scallions, radish salad), Carnitas (orange-braised pulled pork, mango, papaya, radishes, salsa verde) and Short Rib (red wine-braised short ribs, pickled carrots, peppers, onions, fried shallots, micro-cilantro).
